A note from Cam —

We are releasing this cookbook as a way to celebrate the holidays together. In the midst of our busy lives, the holidays serve as a reminder to pause, be present and express gratitude for the simple joys that surround us.

Regardless of what the news says, there is so much love in the world and this team is a great testimony of that. Despite the many hurdles that we've had to overcome this year, we've always managed to stay kind and relentlessly support one another, even when we were most tired. The understanding and compassion that we all exude on a daily basis is one of the many things that makes this team so special. I am grateful for the grace and kindness that this team has shown me this year and for the love you all have spread.

Whether it's the warmth shared through daily laughter or the joy of gathering together for a meal, let us cherish these moments and carry them through with us to next year.

I’d like invite us all to cheers to our hard work this year and to the love that we've spread and want to take this opportunity to share with you a reflection that has guided me this year. Whenever I feel unsure about the future, I turn to look at the past to see how far I've come. And when I look at how far this team has come over the 10 years I've known it, I know that we'll be just fine in whatever our next chapter is.

SWEET POTATO CARROT SOUP


SOUPS | 10 servings | 2h | ♫ Where You Lead - Carole King

My favorite comfort food recipe to make in the fall/winter to meal prep for the week while binge watching Gilmore Girls.


INGREDIENTS  
  1. 2 large sweet potatoes
  2. 6 lbs carrots
  3. 3 small yellow onions
  4. 2 tbsp salted butter
  5. 1 tsp sea salt
  6. 1 tsp ground black pepper
  7. 2 tbsp brown sugar or coconut sugar
  8. 1 tbsp herbs de Provence
  9. 2 tbsp maple syrup
  10. 2 L boiling water
  11. 900 ml unsalted chicken broth

PREPARATION
  1. In a stockpot, sauté the onions, butter, sea salt, pepper, brown sugar and herbs de Provence.
  2. While that is sautéing, cut up the sweet potatoes and carrots. Then add the chicken broth, boiling water, sweet potatoes and carrots to the pot. Simmer for 1 hour.
  3. Use a hand immersion blender or regular blender to purée. Texture should be creamy.
  4. Add maple syrup to the puree and stir. Add more sea salt, pepper and brown sugar by preference.
  5. Simmer for another 30min and jar for meal prep.





POTAGE DE PATATES DOUCES ET DE CAROTTES

Ma recette réconfortante préférée à faire en automne-hiver pour préparer les repas de la semaine tout en regardant Gilmore Girls.


INGRÉDIENTS
  1. 2 grosses patates douces
  2. 6 lb de carottes
  3. 3 petits oignons jaunes
  4. 2 c. à table de beurre salé
  5. 1 c. à thé de sel de mer
  6. 1 c. à thé de poivre noir moulu
  7. 2 c. à table de cassonade ou de sucre de coco
  8. 1 c. à table d’herbes de Provence
  9. 2 c. à table de sirop d’érable
  10. 2 l d’eau bouillante
  11. 900 ml de bouillon de poulet non salé

PRÉPARATION
  1. Dans une marmite, faites revenir les oignons, le beurre, le sel marin, le poivre, la cassonade et les herbes de Provence.
  2. Pendant ce temps, coupez les patates douces et les carottes. Ajoutez ensuite le bouillon de poulet, l’eau bouillante, les patates douces et les carottes dans la marmite. Laissez mijoter pendant une heure.
  3. Réduisez en purée à l’aide d’un mélangeur à main ou d’un mélangeur ordinaire. La texture devrait être crémeuse.
  4. Ajoutez le sirop d’érable à la purée et mélangez. Ajoutez du sel de mer, du poivre et de la cassonade selon vos préférences.
  5. Laissez mijoter encore 30 minutes. Mettez en bocaux pour préparer vos repas.
