A note from Cam —

We are releasing this cookbook as a way to celebrate the holidays together. In the midst of our busy lives, the holidays serve as a reminder to pause, be present and express gratitude for the simple joys that surround us.

Regardless of what the news says, there is so much love in the world and this team is a great testimony of that. Despite the many hurdles that we've had to overcome this year, we've always managed to stay kind and relentlessly support one another, even when we were most tired. The understanding and compassion that we all exude on a daily basis is one of the many things that makes this team so special. I am grateful for the grace and kindness that this team has shown me this year and for the love you all have spread.

Whether it's the warmth shared through daily laughter or the joy of gathering together for a meal, let us cherish these moments and carry them through with us to next year.

I’d like invite us all to cheers to our hard work this year and to the love that we've spread and want to take this opportunity to share with you a reflection that has guided me this year. Whenever I feel unsure about the future, I turn to look at the past to see how far I've come. And when I look at how far this team has come over the 10 years I've known it, I know that we'll be just fine in whatever our next chapter is.

GREEK YOGURT LEMON BLUEBERRY CAKE

Lemon and blueberry desserts are my favorite. There are plenty of those online but this cake is thick, dense, chewy and smooth. It just hits all the right spots, doesn’t that sound great? Add your twist to it if you want to experiment and please enjoy!


INGREDIENTS 
Cake:
  1. 1 ¾ cup all purpose flour
  2. ¾ cup sugar
  3. 1 tsp baking powder
  4. A pinch of salt
  5. 1 egg, beaten
  6. 1 cup milk
  7. ¼ cup butter, melted
  8. 2 tbsp lemon juice
  9. 2 tbsp lemon zest
  10. ¾ cup Greek yogurt
  11. 1 cup blueberries

Glaze:
  1. ½ cup icing sugar
  2. 1 tsp lemon juice
  3. 1 tsp lemon zest
  4. 1 tsp milk

PREPARATION
  1. Preheat oven at 350°F.
  2. Mix all cake ingredients in a bowl.
  3. Mix all glaze ingredients in another bowl.
  4. Bake for 55-60 minutes depending on your oven.
  5. Wait for cake to cool a little and add the glaze on top of it.
  6. If you feel like it and love a good glaze, you can double the mix.
  7. Add some more blueberries on top of the glaze, it just looks better. Enjoy the cake.





GÂTEAU AU YOGOURT GREC, AU CITRON ET AU BLUETS

Les desserts au citron et aux bleuets sont mes préférés. Il y en a beaucoup en ligne, mais ce gâteau est épais, dense, moelleux et onctueux. Il est juste parfait d’ailleurs, n’avez-vous pas déjà l’eau à la bouche? Mettez-y votre propre grain de sel si vous souhaitez expérimenter, et savourez!


INGRÉDIENTS
Gâteau :
  1. 1 ¾ tasse de farine tout usage
  2. ¾ tasse de sucre
  3. 1 c. à thé de poudre à pâte
  4. Une pincée de sel
  5. 1 œuf, fouetté
  6. 1 tasse de lait
  7. ¼ tasse de beurre, fondu
  8. 2 c. à table de jus de citron
  9. 2 c. à table de zeste de citron
  10. ¾ tasse de yogourt grec
  11. 1 tasse de bleuets

Glaçage :
  1. ½ tasse de cassonade
  2. 1 c. à thé de jus de citron
  3. 1 c. à thé de zeste de citron
  4. 1 c. à thé de lait

PRÉPARATION
  1. Préchauffez le four à 350 °F.
  2. Mélangez tous les ingrédients du gâteau dans un bol.
  3. Mélangez tous les ingrédients du glaçage dans un bol.
  4. Faites cuire pendant 55 à 60 minutes, selon votre four.
  5. Attendez que le gâteau refroidisse un peu et ajoutez le glaçage sur le dessus.
  6. Si vous en avez envie et que vous aimez un bon glaçage, vous pouvez doubler la recette.
  7. Ajoutez quelques bleuets sur le glaçage (c’est plus joli). Savourez le gâteau.
