A note from Cam —

We are releasing this cookbook as a way to celebrate the holidays together. In the midst of our busy lives, the holidays serve as a reminder to pause, be present and express gratitude for the simple joys that surround us.

Regardless of what the news says, there is so much love in the world and this team is a great testimony of that. Despite the many hurdles that we've had to overcome this year, we've always managed to stay kind and relentlessly support one another, even when we were most tired. The understanding and compassion that we all exude on a daily basis is one of the many things that makes this team so special. I am grateful for the grace and kindness that this team has shown me this year and for the love you all have spread.

Whether it's the warmth shared through daily laughter or the joy of gathering together for a meal, let us cherish these moments and carry them through with us to next year.

I’d like invite us all to cheers to our hard work this year and to the love that we've spread and want to take this opportunity to share with you a reflection that has guided me this year. Whenever I feel unsure about the future, I turn to look at the past to see how far I've come. And when I look at how far this team has come over the 10 years I've known it, I know that we'll be just fine in whatever our next chapter is.

This is an extremely easy recipe that will leave your friends wondering if they were store bought! Its rich chocolatey flavor, makes it the perfect après-ski or holiday treat. I was sick and tired of eating brownies that were too sweet, so I went on a quest to find the perfect blend. I first introduced this recipe to my parents a couple years ago, and they loved it so much that I've had to share the secret ingredients before moving out.


INGREDIENTS 
  1. 141 g salted butter, melted
  2. 207 g granulated sugar
  3. 2 large eggs
  4. 12 g vanilla extract
  5. 114 g melted milk chocolate chips
  6. 99 g all-purpose flour
  7. 25 g unsweetened cocoa powder
  8. ½ tsp salt
  9. 175 g semi-sweet chocolate chips

PREPARATION
  1. Preheat oven to 350°F. Line a metal 9x9” pan with parchment paper.
  2. Pour melted butter into large mixing bowl. Whisk in sugar by hand until smooth, 30 seconds.
  3. Add in eggs and vanilla extract. Whisk 1 minute.
  4. Whisk in melted chocolate until combined and smooth.
  5. Use a rubber spatula to stir in flour, cocoa powder, and salt until just combined. Stir in whole chocolate chips.
  6. Pour into prepared pan and smooth out.
  7. Bake in the preheated oven for 30 minutes. Let cool in pan for 30 minutes before slicing.

Il s’agit d’une recette extrêmement facile, mais si délicieuse que vos ami·es se demanderont si vous avez acheté ce dessert en magasin! Sa riche saveur chocolatée en fait une gâterie de rêve pour l’après-ski ou les fêtes de fin d’année. J’en avais assez de manger des brownies trop sucrés, alors je me suis mise en quête du mélange parfait. J’ai présenté cette recette à mes parents pour la première fois il y a quelques années, et ils l’ont tellement aimée que j’ai dû en partager les ingrédients secrets avant de déménager.


INGRÉDIENTS
  1. 141 g de beurre salé, fondu
  2. 207 g de sucre granulé
  3. 2 gros œufs
  4. 12 g d’extrait de vanille
  5. 114 g de pépites de chocolat au lait fondues
  6. 99 g de farine tout usage
  7. 25 g de cacao en poudre non sucré
  8. ½ c. à thé de sel
  9. 175 g de pépites de chocolat mi-sucré

PRÉPARATION
  1. Préchauffez le four à 350 °F. Tapissez un moule métallique de 23 cm x 23 cm de papier sulfurisé.
  2. Versez le beurre fondu dans un grand saladier. Incorporez le sucre en fouettant à la main jusqu’à ce que le mélange soit lisse, environ 30 secondes.
  3. Ajoutez les œufs et l’extrait de vanille. Fouettez pendant 1 minute.
  4. Incorporez le chocolat fondu en fouettant jusqu’à ce que le mélange soit homogène.
  5. Incorporez la farine, le cacao et le sel à l’aide d’une spatule en caoutchouc jusqu’à ce qu’ils soient bien mélangés. Incorporez les pépites de chocolat entières.
  6. Versez dans le moule préparé et lissez.
  7. Faites cuire au four préchauffé pendant 30 minutes. Laissez refroidir dans le moule pendant 30 minutes avant de couper en tranches.
