A note from Cam —

We are releasing this cookbook as a way to celebrate the holidays together. In the midst of our busy lives, the holidays serve as a reminder to pause, be present and express gratitude for the simple joys that surround us.

Regardless of what the news says, there is so much love in the world and this team is a great testimony of that. Despite the many hurdles that we've had to overcome this year, we've always managed to stay kind and relentlessly support one another, even when we were most tired. The understanding and compassion that we all exude on a daily basis is one of the many things that makes this team so special. I am grateful for the grace and kindness that this team has shown me this year and for the love you all have spread.

Whether it's the warmth shared through daily laughter or the joy of gathering together for a meal, let us cherish these moments and carry them through with us to next year.

I’d like invite us all to cheers to our hard work this year and to the love that we've spread and want to take this opportunity to share with you a reflection that has guided me this year. Whenever I feel unsure about the future, I turn to look at the past to see how far I've come. And when I look at how far this team has come over the 10 years I've known it, I know that we'll be just fine in whatever our next chapter is.

TOASTY FIGS

There is no real story here aside from the discovery that bread, cheese and figs make the perfect threesome. Perfect to flirt with someone!


INGREDIENTS  
  1. Baguette
  2. Butter
  3. Brie
  4. Figs
  5. Pomegranate
  6. Fresh rosemary
  7. Black sea salt (or regular sea salt if you're not that goth)

PREPARATION
  1. Opening a pomegranate is definitely an adventure, which might add a solid half hour to this operation, so I wouldn't shade you for buying the seeds in a cup. But if you buy a whole pomegranate, tackle this issue first.
  2. Then, cut the baguette lengthwise, butter it up and toast it in the oven. What temperature, you may ask? And for how long, you may ask? No clue. Just look at it golden up until you're satisfied. Take it out and cover with generous slices of brie.
  3. Pop it back into the oven and let it melt and ooze to your heart's content.
  4. Top with fresh rosemary leaves, pomegranate seeds for that pop of fruity flavor in each bite, quarters or slides of fresh figs, and sprinkle with black salt to counteract the sugar of the fruits.

Je n’ai pas vraiment d’introduction à offrir pour cette recette, à part vous dire que le pain, le fromage et les figues forment un trio parfait. Parfait pour séduire quelqu’un!


INGRÉDIENTS  
  1. Baguette
  2. Beurre
  3. Brie
  4. Figues
  5. Grenade
  6. Romarin frais
  7. Sel de mer noir (ou sel de mer normal pour les moins « goth »)

PRÉPARATION
  1. Ouvrir une grenade représente une véritable aventure, qui peut ajouter une bonne demi-heure à la préparation. Je ne vous reprocherai donc pas d’acheter les grains en pot. Mais si vous achetez une grenade fraîche, attaquez-vous d’abord à celle-ci.
  2. Ensuite, coupez la baguette dans le sens de la longueur, beurrez-la et faites-la griller au four. À quelle température, me direz-vous? Et pendant combien de temps? Aucune idée. Contentez-vous de la regarder dorer jusqu’à ce que son bronzage vous convienne. Ensuite, sortez-la et recouvrez-la de généreuses tranches de brie.
  3. Remettez-la au four et laissez-le brie fondre et couler à votre guise.
  4. Ajoutez des feuilles de romarin frais, des grains de grenade (pour un éclat fruité dans chaque bouchée), des quartiers ou des tranches de figues fraîches, puis saupoudrez de sel noir pour équilibrer le sucré des fruits.
