A note from Cam —

We are releasing this cookbook as a way to celebrate the holidays together. In the midst of our busy lives, the holidays serve as a reminder to pause, be present and express gratitude for the simple joys that surround us.

Regardless of what the news says, there is so much love in the world and this team is a great testimony of that. Despite the many hurdles that we've had to overcome this year, we've always managed to stay kind and relentlessly support one another, even when we were most tired. The understanding and compassion that we all exude on a daily basis is one of the many things that makes this team so special. I am grateful for the grace and kindness that this team has shown me this year and for the love you all have spread.

Whether it's the warmth shared through daily laughter or the joy of gathering together for a meal, let us cherish these moments and carry them through with us to next year.

I’d like invite us all to cheers to our hard work this year and to the love that we've spread and want to take this opportunity to share with you a reflection that has guided me this year. Whenever I feel unsure about the future, I turn to look at the past to see how far I've come. And when I look at how far this team has come over the 10 years I've known it, I know that we'll be just fine in whatever our next chapter is.

CHEESE WIZ MAC


PASTA | 2 servings | 20m | ♫ Only Time - Enya

When I was young and my parents had just separated, my dad used to make us mac and cheese with macaroni and Cheese Wiz because he wasn't good at cooking. Ironically, he didn't buy Kraft Dinner because he was too embarrassed, so he preferred to buy a jar with very yellow, chemical cheese. Today, it still remains a mystery to me after several years, even when I ask him why. Despite my open-mindedness, he becomes defensive on the subject.
    Two years ago, I decided to recreate this experience. At the first bite, I felt that the recipe lacked punch due to the sweetness of the cheese, so I decided to add salt and pepper (a lot of salt and pepper), and I loved it! A super comforting meal on a Friday night after a tough week at work! The dish pairs well with a wheat beer or a strong and/or spicy lager. I recommend the beer “Maudite” to enhance the spicy taste of the pepper in the recipe. If you're not too embarrassed about yourself and feel ambitious with your date, it's a great time to introduce them to this culinary treasure.


INGREDIENTS 
  1. 750 ml water
  2. 250 cup macaroni, dry
  3. 2 tbsp Cheez Whiz
  4. 1 tsp black pepper

PREPARATION
  1. In a medium pot, bring water to a boil.
  2. Once boiling, add the macaroni and cook until al dente (about 8 minutes).
  3. Drain the macaroni and transfer back to the pot.
  4. Add the Cheez Whiz and pepper. Ta-da!

Quand j’étais jeune et que mes parents venaient de se séparer, mon père nous faisait des macaronis au fromage avec du Cheese Wiz parce qu’il n’était pas bon en cuisine. Ironiquement, il n’achetait pas de Kraft Dinner parce qu’il avait trop honte, alors il préférait acheter un pot en vitre avec du fromage très jaune et chimique. Après plusieurs années, ce choix demeure un mystère pour moi, et je lui ai même demandé pourquoi. Nonobstant mon ouverture d’esprit, il devient sur la défensive sur le sujet.
Il y a deux ans, j’ai décidé de répéter cette expérience. À la première bouchée, je trouvais que la recette manquait de punch à cause de la douceur du fromage, alors j’ai pensé ajouter du sel et du poivre (beaucoup) et j’ai adoré ça! C’est un repas super réconfortant le vendredi soir après une grosse semaine de travail! Le plat s’accompagne bien d’une bière blanche ou une blonde forte ou épicée. Ça peut être de la bière « Maudite » pour relever le goût pimenté du poivre de la recette. Si vous n’avez pas trop honte de vous-même et que vous vous sentez ambitieux avec votre date, c’est un moment propice pour lui faire découvrir ce trésor culinaire.


INGRÉDIENTS
  1. 750 ml d’eau
  2. 1 tasse de macaronis
  3. 2 c. à table de Cheez Whiz
  4. 1 c. à thé de poivre

PRÉPARATION
  1. Amener l’eau à ébullition dans une casserole.
  2. Lorsque l’eau est bouillante, ajouter les macaronis. Cuire les macaronis jusqu’à ce que ce soit al dente selon la marque, environ 8 minutes.
  3. Ensuite, égoutter les pâtes et les remettre dans la casserole.
  4. Puis, ajoutez le Cheese Wiz et le poivre. Ta-da!
