A note from Cam —

We are releasing this cookbook as a way to celebrate the holidays together. In the midst of our busy lives, the holidays serve as a reminder to pause, be present and express gratitude for the simple joys that surround us.

Regardless of what the news says, there is so much love in the world and this team is a great testimony of that. Despite the many hurdles that we've had to overcome this year, we've always managed to stay kind and relentlessly support one another, even when we were most tired. The understanding and compassion that we all exude on a daily basis is one of the many things that makes this team so special. I am grateful for the grace and kindness that this team has shown me this year and for the love you all have spread.

Whether it's the warmth shared through daily laughter or the joy of gathering together for a meal, let us cherish these moments and carry them through with us to next year.

I’d like invite us all to cheers to our hard work this year and to the love that we've spread and want to take this opportunity to share with you a reflection that has guided me this year. Whenever I feel unsure about the future, I turn to look at the past to see how far I've come. And when I look at how far this team has come over the 10 years I've known it, I know that we'll be just fine in whatever our next chapter is.

VEGETABLES | 2 servings | 5m |  I Got You - James Brown & the Famous Flames

This is a super simple yet traditional centuries-old Greek salad deriving from the island of Crete. I may not come from there, but I have always loved their cuisine, especially this delicious salad!


INGREDIENTS  
  1. Rusk
  2. Olives
  3. EVOO
  4. Dried oregano
  5. Feta
  6. Capers
  7. Tomatoes
  8. S&P

PREPARATION
  1. To start, I like to break the rusk bread (if it's whole) into pieces to eat it easily. Generously add olive oil over it so it can soften up.
  2. Cut the tomatoes of your choice or even grate it on top of the rusks (whichever your preference) and crumble the feta all over it.
  3. To finish, add dried oregano over the feta and drizzle with more olive oil. Add some olives and even capers if you'd like.

P.S this dish will taste best if the products are from Greece but if you can't get the majority, then the Greek olive oil is definitely non-negotiable! Enjoy :D

Il s’agit d’une salade grecque traditionnelle très simple originaire de l’île de Crète, dont la recette date de plusieurs siècles.


INGRÉDIENTS
  1. Biscottes
  2. Olives
  3. Huile d’olive extra-vierge
  4. Origan séché
  5. Féta
  6. Câpres
  7. Tomates
  8. Sel et poivre

PRÉPARATION
  1. Pour commencer, j’aime casser les biscottes (si elles sont entières) en morceaux. Versez-y une généreuse rasade d’huile d’olive pour les amollir un peu.
  2. Coupez les tomates de votre choix sur les biscottes (vous pouvez même les râper, selon votre préférence) et émiettez la féta par-dessus.
  3. Pour finir, assaisonnez avec de l’origan séché et arrosez le tout d’un filet d’huile d’olive supplémentaire. Si vous le souhaitez, ajoutez quelques olives et même des câpres.

PS – Ce plat est meilleur lorsque préparé avec des produits qui proviennent de Grèce, mais si vous n’en trouvez pas, tâchez au moins d’utiliser de l’huile d’olive grecque. Ça, c’est absolument non négociable! Bon appétit :D
