A note from Cam —

We are releasing this cookbook as a way to celebrate the holidays together. In the midst of our busy lives, the holidays serve as a reminder to pause, be present and express gratitude for the simple joys that surround us.

Regardless of what the news says, there is so much love in the world and this team is a great testimony of that. Despite the many hurdles that we've had to overcome this year, we've always managed to stay kind and relentlessly support one another, even when we were most tired. The understanding and compassion that we all exude on a daily basis is one of the many things that makes this team so special. I am grateful for the grace and kindness that this team has shown me this year and for the love you all have spread.

Whether it's the warmth shared through daily laughter or the joy of gathering together for a meal, let us cherish these moments and carry them through with us to next year.

I’d like invite us all to cheers to our hard work this year and to the love that we've spread and want to take this opportunity to share with you a reflection that has guided me this year. Whenever I feel unsure about the future, I turn to look at the past to see how far I've come. And when I look at how far this team has come over the 10 years I've known it, I know that we'll be just fine in whatever our next chapter is.

BROCOLI FETA SOUP


SOUPS | 4 servings | 1h | Broccoli - DRAM feat. Lil Yachty

I found this recipe while scrolling on Tiktok, looking for easy meals to make during F/W. I love making this recipe for my boyfriend, when we both have long days at work, especially when it's cold outside. Ideal conditions; easy meal prep, cold nights. The first person I made this dish for was my boyfriend, Marco. I wish I could make this dish for my cat, Zumi, he deserves a warm little hug.


INGREDIENTS  
  1. 1 lb broccoli
  2. 4 cups low sodium chicken broth
  3. 2 cups water
  4. 3 cloves garlic, minced
  5. 1 tsp salt
  6. Black pepper
  7. 3/4 cup orzo pasta
  8. 3.5 oz feta cheese
  9. Chili pepper flakes
  10. Olive oil
  11. Lemon juice

PREPARATION
  1. Rinse and slice your broccoli into florets and dice the stems too.
  2. To a medium stock pot, add all of the broccoli pieces, garlic, broth, water, salt and pepper. Bring to a boil and then reduce heat to a simmer. Cover your pot and cook for 30 minutes.
  3. Using a potato masher, gently smash the broccoli about 6 times. Leave large and small pieces in the soup for texture. Add in the orzo and cook uncovered, STIRRING CONSTANTLY, for 15 minutes or until pasta is cooked. Stay on top of the pot, the pasta will stick if left unattended.
  4. Remove the pot from the burner and crumble in your feta. Mix it in.
  5. Serve in your bowls, drizzle with a little olive oil, squeeze on some lemon juice and top with chili pepper flakes to taste. Serve with fresh warm bread!





SOUPE BROCOLI ET FÉTA

J’ai trouvé cette recette en naviguant sur TikTok, à la recherche de repas faciles à préparer pendant la saison froide. J’adore préparer cette recette pour mon chum quand on a tous les deux eu une longue journée de travail, surtout quand il fait froid dehors. Conditions idéales; repas facile à préparer, soirées froides. La première personne pour qui j’ai préparé ce plat était mon chum, Marco. J’aimerais pouvoir le préparer pour mon chat, Zumi, qui mérite aussi un plat réconfortant.


INGRÉDIENTS
  1. 1 livre de brocoli
  2. 4 tasses de bouillon de poulet à faible teneur en sodium
  3. 2 tasses d’eau
  4. 3 gousses d’ail émincées
  5. 1 c. à thé de sel
  6. Poivre noir
  7. 3/4 de tasse de pâtes orzo
  8. 3,5 oz de féta
  9. Flocons de piment broyés
  10. Huile d’olive
  11. Jus de citron

PRÉPARATION
  1. Rincez et coupez les têtes de brocolis en fleurons, et les pieds, en dés.
  2. Dans une marmite de taille moyenne, ajoutez tous les morceaux de brocoli, l’ail, le bouillon, l’eau, le sel et le poivre. Portez à ébullition, puis réduisez le feu pour laisser mijoter. Couvrez votre marmite et laissez cuire pendant 30 minutes.
  3. À l’aide d’un pilon à patates, écrasez délicatement le brocoli (environ 6 fois). Laissez quelques morceaux dans la soupe pour donner de la texture. Ajoutez l’orzo et faites cuire à découvert, en remuant constamment, pendant 15 minutes ou jusqu’à ce que les pâtes soient cuites. Restez près de la marmite, les pâtes colleront si vous ne les surveillez pas.
  4. Retirez la marmite du feu et émiettez le féta. Incorporez le féta émietté à la soupe.
  5. Servez dans des bols, arrosez d’un peu d’huile d’olive, d’un peu de jus de citron et ajoutez des piments broyés au goût. Servir avec du pain frais et chaud!
